Waffles

After a rough day yesterday, I decided to make breakfast for dinner. This recipe makes six individual waffles in a standard waffle maker - I scaled it down to half. I also picked up some turkey sausage patties to eat on the side. Life looked a lot brighter after dinner!

Whole Grain Waffles
From Allrecipes. Makes six waffles.

Ingredients:
2 eggs, beaten
1 3/4 cups skim milk
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour (I used all-purpose whole wheat)
1/2 cup flax seed meal
1/4 cup wheat germ (I didn't have any, so I just added extra flour)
1/4 cup all-purpose flour
4 teaspoons baking powder
1 Tablespoon sugar
1/4 teaspoon salt

Directions:
1. Preheat a waffle iron and coat with cooking spray.
2. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla.
3. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
4. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
